I’m Santhosh, and when I was studying for my Master’s in Bioinformatics at Georgia Tech, I missed my mother’s home cooking. I found many Indian spots here served food that felt low quality or not fresh. I learned that not all chains in North America used real, healthy ingredients. My ancestors were farmers in South India, and I wanted to honor that tradition of good, honest food. That inspired me to start Kolapasi so everyone can enjoy quick, fresh meals made from scratch each day.
